Champagne Collard-Picard Racines

Collard-Picard Racines is a characterful Blanc de Noirs Champagne made entirely from Pinot Meunier, offering a distinctive expression of the grape and the house’s thoughtful winemaking style. Sourced mainly from the clay- and limestone-rich slopes of the Vallée de la Marne, it combines depth, freshness, and a refined, very dry finish. As part of the modern revival of terroir-driven Meunier, it stands out for its precision and personality.

Tasting Notes
In the glass, it shows a pale golden color with a fine, persistent mousse. The nose opens with ripe orchard fruit, brioche, toasted nuts, and a clear mineral edge that adds tension and lift. The palate is crisp and focused, with lively acidity, a dry profile, and layers of citrus, stone fruit, and subtle pastry notes. The low dosage keeps it taut and gastronomic, while the long, saline finish suggests excellent balance and the ability to evolve further over a few years.

Production
Racines is drawn primarily from vineyards in the Vallée de la Marne, where clay and chalk soils help Pinot Meunier achieve both ripeness and freshness. The grapes are vinified in large oak casks without malolactic fermentation, preserving the wine’s natural brightness while adding texture and nuance. It then spends around 36 months on the lees, building complexity without sacrificing the wine’s crisp, mineral-driven style.

Food & Serving
This Champagne pairs beautifully with oysters, shellfish, sashimi, roast poultry, mature Comté, or mushroom-based dishes. Serve well chilled, ideally at 8–10°C, and decanting is not recommended; a brief rest in the glass will be enough to let the aromatics open up.
