Why shop with us?
Champagne Collard-Picard Archives Millésimée 2012 sits at the very top of Olivier Collard and Caroline Picard’s range, and it shows: this is a serious, finely tuned Champagne from one of the region’s most compelling producers. Made exclusively from Grand Cru fruit and handled with a restrained, artisanal approach, it delivers both immediacy and the promise of greater complexity with age. With its low dosage and impressive depth, it offers outstanding value for a cuvée of this level.
Tasting Notes
In the glass, it shows a bright, refined golden hue with a fine, persistent mousse. The nose opens with fresh apple and pear, followed by layered notes of caramel, brioche, almond, and a subtle forest-floor nuance that adds real depth.
The palate is dry, elegant, and concentrated, with the tension and precision you would expect from a top Champagne based on Chardonnay and Pinot Noir. There is excellent structure and a creamy sense of breadth, balanced by vivid freshness and a long, mineral-tinged finish. Already expressive now, it has the backbone to develop even more complexity over time.
Production
This 2012 vintage cuvée is blended from 80% Chardonnay and 20% Pinot Noir sourced entirely from Grand Cru vineyards in the Côte des Blancs. The wine undergoes no malolactic fermentation and is not filtered, preserving its natural texture, freshness, and precision, then spends 30 months aging in oak barrels. With just 2 g/L dosage, the result is a taut, elegant Champagne with a distinctly dry profile and strong gastronomic character.
Food & Serving
This is very much a food Champagne, best served in large white-wine glasses to allow its aromatics and texture to open up fully. It pairs beautifully with refined dishes such as shellfish, lobster, roast poultry, truffle dishes, aged hard cheeses, and creamy mushroom preparations. Serve chilled at around 8–10°C, and consider brief decanting only if you want to encourage the wine’s more complex savory notes to emerge.
