Description
Champagne Chavost Paradoxe Brut Nature Magnum is a precise, tension-filled cuvée that combines ripe fruit with cool, saline freshness. Made without added sulphur and without dosage, it offers a pure, uncompromising expression of Chardonnay and Pinot Meunier from north-facing parcels in the Marne. The 1.5-litre format is especially well suited to extended table service and graceful development.
Tasting Notes
Bright and refined in appearance, with a fine, persistent bead. The nose opens with aromas of delicate pastry and freshly baked brioche, followed by juicy ripe pear and a distinctly refreshing mineral character.
On the palate, the wine begins delicate and precise before gaining structure and breadth. Its natural freshness and saline finish balance the rounded fruit, while the absence of dosage leaves the cuvée particularly clear and dry. The magnum format should support elegant development in bottle, although its freshness and fruit are already expressive when young.
Production
The cuvée brings together 60% Chardonnay and 40% Pinot Meunier from north-facing parcels in the Marne, where the cooler exposure helps preserve freshness and definition. The wine is matured in equal parts in 4,000-litre wooden vats and temperature-controlled stainless-steel tanks. Produced without added sulphur and bottled without dosage, the multi-vintage blend draws on the 2019 to 2023 harvests to create a balanced combination of ripe fruit, mineral tension and precision.
Food & Serving
Its dry, saline profile makes it a versatile partner for oysters, shellfish, sashimi, ceviche and lightly smoked fish. It also works beautifully with fresh goat’s cheese, delicate poultry dishes and dishes that benefit from a crisp, mineral accompaniment. Serve well chilled at approximately 8–10°C. Decanting is not generally necessary for Champagne, though a brief, careful pour into a wide glass can reveal additional pastry and fruit nuances for those who prefer a more open expression.
