Tasting Notes
In the glass, Les Chênes 2021 shows a pale to medium lemon hue with green reflections, hinting at its youth and bright acidity. The nose opens with notes of fresh lemon zest, white blossom, and green apple, followed by subtle layers of pear, crushed stone, and a gentle touch of brioche and hazelnut from time on lees and discreet oak aging. On the palate, this is a precise and lively Bourgogne Blanc: citrus and orchard fruit are wrapped in a fine, chalky minerality, with a hint of saline tension that keeps everything lifted and refreshing. Production
Domaine Céline et Laurent Tripoz farms their vineyards in and around Loché in the Mâconnais on classic Burgundian clay-limestone soils that naturally lend themselves to mineral, finely etched Chardonnay. The estate is certified organic and follows low-intervention practices in the vineyard, with hand harvesting to ensure only perfectly ripe and healthy grapes make it to the cellar. In the winery, fermentation takes place with indigenous yeasts, typically in a combination of stainless steel and neutral or lightly used oak, allowing the character of the terroir to shine without heavy oak influence. The wine is then aged on its fine lees, adding texture and complexity while maintaining tension, and bottled with minimal additions to preserve purity and vibrancy.

Les Chênes Bourgogne Blanc 2021 is a versatile partner at the table, pairing brilliantly with shellfish, oysters, and simply grilled fish, as well as roast chicken, creamy poultry dishes, and lightly sauced veal or pork.
