Description

A finely bubbled, zero-dosage Crémant de Bourgogne made from 100% Chardonnay in the Mâconnais, offering a distinctive alternative to Champagne. Produced by traditional bottle fermentation and biodynamic principles, it reflects the growing reputation of southern Burgundy for characterful sparkling wines.

Tasting Notes
The wine has a fine, persistent mousse. Chardonnay from mature vines and extended lees ageing suggest a profile of fresh citrus and orchard fruit alongside delicate, bready notes; its zero dosage keeps the finish notably dry and focused. The base wine is from 2020, though the bottling is non-vintage.

Production
The Chardonnay comes from vines more than 30 years old, rooted in deep clay-limestone soils and farmed biodynamically. Grapes are selectively hand-harvested and spontaneously fermented; the base wine spends eight months in oak barrels before secondary fermentation in bottle. It then rests on its fine lees for 24 to 36 months, depending on disgorgement date. Dosage is 0 g/l, and no additions are used during production apart from sugar and selected natural Champagne yeast for the second fermentation; no sulphur is added.

Food & Serving
Serve well chilled, around 8–10°C, with oysters, shellfish, fresh goat’s cheese or simply prepared white fish. Its dry style also suits aperitif service. Decanting is generally unnecessary for a sparkling wine; pour gently into flute or white-wine glasses to preserve and enjoy the fine bubbles.
