Cayuse Impulsivo 2020 is a bold, characterful Tempranillo that showcases the unique volcanic-rock terroir of the Walla Walla Valley in Washington State. Tasting Notes
In the glass, the 2020 Impulsivo is deep ruby with a vibrant, almost electric edge that hints at both concentration and freshness. The nose is intensely perfumed, opening with sweet baking spices, blood orange zest and ripe raspberry, followed by layers of cocoa powder, black pepper, crushed violets and a subtle, savory earthiness.
On the palate, it is silk-smooth and almost creamy in texture, with ultra‑ripe red fruits—raspberry, wild strawberry and red plum—wrapped in notes of cocoa nib, licorice, orange peel and peppery inner florals. The mid-palate is generous yet finely balanced by lively acidity and a firm, well-integrated structure. The finish is long, potent and focused, leaving lingering sweet tannins and a refined touch of bitter spice that invites another sip. While already captivating in its youth, this vintage has the backbone and concentration to evolve beautifully over 10–15 years in a good cellar.
Production
Impulsivo is sourced from Cayuse’s densely planted, cobblestone-littered vineyards in the Walla Walla Valley—an area famed for its ancient river stones that force the vines to struggle, naturally limiting yields and intensifying flavor. Farmed according to biodynamic principles, the vines are meticulously tended and typically harvested by hand at optimal ripeness to preserve balance and finesse. In the cellar, Cayuse favors a minimalist, artisanal approach: gentle handling of the fruit, fermentation with careful extraction to capture Tempranillo’s structure without harshness, and élevage in carefully selected barrels to add polish and complexity while keeping the wine’s wild, savory character front and center.
Food & Serving
Impulsivo 2020 is a natural partner for richly flavored dishes such as grilled lamb chops with rosemary, slow-braised beef short ribs, Iberico pork, chorizo stews or roasted game birds with earthy root vegetables. It also pairs beautifully with aged Manchego, hard sheep’s cheeses and dishes featuring smoked paprika or roasted peppers. Serve at 16–18°C, ideally after 1–2 hours in a decanter to allow the aromatics and texture to fully unfold. In its youth, a longer decant can help soften the structure; with bottle age, a gentle splash decant just before serving is sufficient.
