Tasting Notes
In the glass, the 2019 Impulsivo shows a deep, opaque purple core with inky hues at the rim, hinting at concentration and youth. The nose is generous and complex: ripe black plum and black cherry are lifted by notes of blackberry compote, tobacco leaf, espresso grind, and hints of roasted rosemary and thyme, with a subtle undertone of exotic spice. On the palate, it is medium to full-bodied with a rich, juicy texture and broad shoulders, yet retains a vibrant freshness. Dark fruits—plum, blackcurrant, and blackberry—unfold in waves, supported by fine-grained, polished tannins and a lively, mouthwatering acidity. Savory tones of cocoa, coffee bean, dried herbs, and a touch of smoked earth build through the mid-palate, leading to a long, persistent finish that is both generous and refined. While already impressive, this vintage will reward patience; it can comfortably age for 10–15 years from the vintage, gaining further complexity and integration.

Production
Impulsivo is crafted from Tempranillo vines rooted in stony, basalt- and cobblestone-rich soils that naturally limit yields and concentrate flavor. The site’s warm days and cool nights help preserve acidity and aromatic detail in the fruit. Grapes are typically harvested by hand at optimal ripeness, with careful sorting to ensure only the healthiest clusters make it into the winery. Fermentation proceeds in small lots, allowing close temperature control and gentle extraction of color, tannin, and flavor. The wine is then raised in quality oak barrels—largely French—with an élevage designed to polish structure and add subtle notes of spice and toast without overwhelming the purity of the fruit, resulting in a Tempranillo of depth, precision, and distinctive terroir expression.

Think grilled or roasted lamb with rosemary, herb-crusted beef, Iberico pork, charred vegetables, or hearty stews with beans and chorizo.
