Tasting Notes
In the glass, the 2017 Cailloux Syrah shows a deep, opaque ruby-purple hue, hinting at its concentration and intensity. The nose is highly expressive and layered, opening with blackberries, black cherries, and plum compote, then evolving toward black tea, cracked black pepper, grilled meats, and a distinct umami character. Floral notes of dried lilac and lavender, along with hints of smoked herbs and olive tapenade, add complexity. On the palate, this is medium to full-bodied yet remarkably poised and elegant. The texture is silky with a fine, gravelly minerality that reflects its stony origins. Flavors of dark berries, cured meat, roasted game, and black pepper unfold slowly, supported by vibrant acidity and finely knit tannins. Production
Cailloux Vineyard is planted in the famed cobblestone soils of the Walla Walla Valley, where rounded river stones, excellent drainage, and a relatively warm, dry climate create ideal conditions for Syrah. The vines struggle in this rocky terroir, naturally limiting yields and intensifying flavor. Cayuse farms biodynamically and harvests by hand, selecting only perfectly ripe clusters. In the cellar, the grapes are typically fermented with a significant proportion of whole clusters using native yeasts, enhancing aromatic complexity and structure. The wine is then aged in mostly neutral French oak barrels to preserve the purity of fruit and the distinct savory, mineral character that defines Cayuse Syrah.

Food & Serving
This Syrah is a superb partner for richly flavored, savory dishes. Think grilled lamb chops with rosemary, duck breast, slow-braised short ribs, venison, charcuterie, and aged hard cheeses, as well as dishes featuring mushrooms, truffles, or lentils. For the best showing, serve at 16–18°C (about 60–64°F). Decanting for 1–2 hours is recommended in its youth to allow the wine’s aromatic complexity and texture to fully unfold, though it can be enjoyed immediately with a bit of time in the glass.

Cayuse Vineyards was founded by Christophe Baron in the late 1990s, when he famously discovered the stony, river-rock terraces of Walla Walla and recognized their resemblance to the Rhône Valley’s greatest terroirs. Working from the Oregon side of the Walla Walla Valley, Cayuse became instrumental in putting the region on the global fine-wine map, particularly for Syrah. The estate is farmed biodynamically and is renowned for low yields, meticulous vineyard work, and a fiercely terroir-first philosophy. Over the years, Cayuse has garnered consistently high critical praise and a near-mythic status among collectors, with its single-vineyard Syrahs—like Cailloux—often cited as some of the most distinctive and characterful in the New World.
