Tasting Notes
In the glass, it shows a dark, opaque core with the kind of concentration you expect from a top-tier California Cabernet. The nose is immediately inviting, opening with dark cherry, blueberry pie, boysenberry, tar, milk chocolate, and a subtle lift of licorice as it breathes. The palate is lush and intensely layered, with flavors of black cherry, blueberry, raspberry liqueur, boysenberry, fine chocolate shavings, and savory tar weaving together over a powerful, polished frame. It is strikingly expressive now, but the wine has the structure and richness to evolve beautifully over time, gaining even more complexity with cellaring.

Production
Special Selection is made only in vintages when fruit from Caymus’s top vineyard blocks reaches exceptional quality. The grapes are sourced from carefully selected plots in California, with an emphasis on ripeness, concentration, and balance, and the harvest is timed to capture optimal flavor development. Under the guidance of winemaker Chuck Wagner, the wine is crafted to deliver Caymus’s signature plush style while preserving the structure needed for long aging.

Food & Serving
Best enjoyed with richly flavored dishes such as grilled ribeye, braised short ribs, roast lamb, or truffle-infused pasta. Serve at around 16–18°C and consider decanting for at least 1–2 hours to allow the wine’s aromas and texture to fully open, especially in its youth.
