Tasting Notes
In the glass, this Cabernet shows a deep purple hue that borders on black, hinting at its concentration. The nose is lavish and expressive, with crème de cassis, violets, dark chocolate, and lifted notes of lilac, anise, and cardamom. The palate is plush and full-bodied, layered with dark berries, cocoa, sweet tobacco, mocha, leather, cigar box, vanilla, and a touch of sweet licorice. Tannins are smooth and well-integrated, never harsh or drying, while the finish is warm, spicy, and long. Enjoyable now, it also has the potential to evolve beautifully over the next 20 to 25 years.

Sourced from Napa Valley, where warm days and careful vineyard management allow Cabernet Sauvignon to reach full ripeness, this wine is made in Caymus’s signature dark, intense style. The grapes are left hanging longer than usual on the vine to build concentration and richness, a method that increases the risk of weather-related yield loss but delivers exceptional depth in the finished wine. French oak is used thoughtfully, adding polish and spice without overpowering the fruit.

Food & Serving
This is a wine built for hearty dishes such as grilled ribeye, braised short ribs, roast lamb, or a well-aged cheddar. It also pairs beautifully with mushroom-based dishes and rich, slow-cooked sauces. Serve at around 16–18°C, and decant for one to two hours if drinking young to allow the aromatics and texture to open fully.
