Tasting Notes
In the glass, the wine shows a dense, near-black purple color that signals its concentration straight away. The nose is generous and expressive, with crème de cassis, violets, chocolate, lilac, anise, and cardamom layered over a dark-fruited core. The palate is lush and full-bodied, offering ripe black fruit, dark chocolate, sweet tobacco, mocha, leather, cigar box, vanilla, and sweet licorice. It finishes warm, spicy, and persistent, with plenty of depth and enough structure to evolve beautifully over time. While it can be enjoyed now, this vintage also has the balance and richness to age for decades.

Caymus Cabernet Sauvignon is crafted in California from carefully selected Cabernet Sauvignon grapes, with the style defined by extended hang time on the vine to achieve exceptional ripeness and intensity. This approach, while demanding and sometimes risky, is central to Caymus’ signature dark, concentrated character. The result is a wine that combines ripe fruit, plush texture, and layered complexity with a distinctly Napa Valley expression.

Food & Serving
This wine pairs beautifully with grilled ribeye, roasted lamb, braised short ribs, aged cheeses, and dishes with mushroom or truffle accents. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young to allow the aromatics and structure to open fully.
