Cavallotto’s Dolcetto d’Alba Vigna Scot 2021 comes from a truly prized single parcel in the heart of Barolo country, giving this everyday Piedmontese grape an unusually refined sense of place. Sourced from old vines and crafted with the same care the estate brings to its more celebrated wines, it combines fresh drinkability with real structure and depth.

Tasting Notes
In the glass, it shows a vibrant, youthful ruby color. The nose is immediately appealing, offering generous aromas of red and black cherries with a clean, lifted fruit profile. On the palate, those cherry notes return with added ripeness and balance, supported by lively acidity and firm, polished tannins that give the wine shape and freshness. The result is a Dolcetto with impressive poise and enough structure to develop well over the next few years, while remaining delicious in its youth.

Production
The Vigna Scot parcel covers 2.96 hectares and sits between the Bricco Boschis and Vignolo vineyards, right in one of the most esteemed areas for Barolo production. The old Dolcetto vines on the hilltop provide the fruit for this wine. The grapes are fully destemmed before pressing, fermented with native yeasts at a controlled temperature of 29°C, then aged for 6 months in Slavonian oak casks of varying sizes followed by another 6 months in cement tank before bottling at the estate.

Food & Serving
This is an excellent match for classic Italian dishes such as vitello tonnato, beef tartare, pasta with rich tomato sauces, or antipasti featuring cured meats and hard cheeses. Serve slightly cool, around 15–17°C, and decanting is generally not necessary, though a short aeration can be helpful if opened early.
