First produced in 1985 as the region’s pioneering 100% Merlot, it has achieved near-cult status for its depth, elegance, and remarkable longevity. Sourced from a tiny 3.84-hectare amphitheatre of vines high on the Bellavista hill, this 2021 vintage continues the legacy with superb precision and refinement.

Tasting Notes
In the glass, L’Apparita 2021 shows a deep, vibrant ruby core with purple highlights, signaling both concentration and youthful energy. The nose is complex and expressive, opening with ripe black cherry, plum and blackberry, layered with notes of violet, graphite, tobacco leaf, and fine dark chocolate, framed by hints of cedar and sweet spice from high-quality French oak. On the palate, this is full-bodied yet poised, with a silky, almost velvety texture that is a hallmark of L’Apparita. Dense black and red fruits intertwine with notes of licorice, espresso, and savory herbs, supported by polished, ultra-fine tannins and a bright, mouthwatering acidity that reflects its high-altitude origin. The finish is long, layered and precise, promising excellent development in bottle. While already impressive in its youth, this 2021 has the structure and balance to age gracefully for 15–20+ years under proper cellaring conditions.

Production
L’Apparita comes from a small, distinct vineyard of just 3.84 hectares at the very top of the Vigneto Bellavista hill in Gaiole in Chianti, sitting around 490 meters above sea level. The soils here are predominantly clay-rich with good structure, which suits Merlot perfectly, while the elevation and cool nights help preserve freshness and aromatic lift. Originally planted in 1975 with Canaiolo and Malvasia Bianca, the vines were grafted between 1982 and 1985 to Merlot clone 342, now fully mature and low-yielding. The grapes are hand-harvested parcel by parcel at optimal ripeness, carefully sorted, and fermented in temperature-controlled stainless steel or cement to capture purity of fruit. The wine is then aged in fine-grained French oak barriques (a significant proportion new), where it undergoes malolactic fermentation and extended maturation to integrate tannins and build complexity, before further bottle aging prior to release.

Food & Serving
L’Apparita 2021 is a natural partner for refined, richly flavored dishes. It shines with bistecca alla fiorentina, slow-braised beef or lamb, veal shank, game birds, and truffle-accented dishes, as well as aged hard cheeses like Parmigiano Reggiano or mature pecorino toscano. Its depth and structure also complement porcini risotto, roasted root vegetables, and savory dishes with rosemary, sage, and thyme. For optimal enjoyment, serve at 16–18°C (60–64°F). Decant for 1–2 hours in its youth to allow the aromas and texture to fully open; with extended bottle age, a shorter, gentle decant mainly for sediment will suffice.
