Tasting Notes
In the glass, it shows an intense golden-yellow colour that immediately signals ripeness and concentration. The nose is complex and inviting, with aromas of ripe pear, baked apple, and exotic fruit, lifted by notes of butter, roasted nuts, vanilla, and a subtle hint of toast from barrel ageing. The palate is full-bodied and concentrated, with a creamy texture balanced by a precise, mineral-driven acidity that keeps the wine lively and focused. The oak is clearly present but beautifully integrated, adding depth and complexity without overpowering the fruit. The finish is long, harmonious, and lightly spicy, with a clear mineral edge. This is a Chardonnay Riserva with excellent ageing potential.

Production
Burgum Novum comes from Alto Adige, where cool Alpine conditions and a strong diurnal shift help preserve freshness, aroma, and structure in the grapes. Chardonnay is typically harvested at optimal ripeness to achieve concentration and balance, then vinified with careful use of oak to build complexity and texture while maintaining the wine’s natural mineral backbone.

Food & Serving
This wine pairs well with rich seafood dishes, roast chicken, veal, creamy pasta, truffle risotto, or more mature cheeses. Serve it slightly chilled at around 10–12°C. Decanting is not essential, but giving it a little time in the glass can help reveal its full aromatic complexity.
