Case Paolin Prosecco Asolo Superiore is a refined, dry-style Prosecco that delivers elegance, freshness, and impressive finesse in every glass. Made from 100% Glera and sourced from the family’s own organically farmed vineyards on the slopes of Montebelluna in the Volpago del Montello area, it stands out for its lively bubbles, crisp structure, and classic Asolo character.

Tasting Notes
Pale straw-yellow with green reflections, it shows a delicate, persistent mousse in the glass. The aroma is inviting and bright, with notes of pear, yellow flowers, and ripe citrus fruits. On the palate it is juicy and refreshing, with well-integrated acidity and a continuous stream of fine bubbles. Flavours of pear, green apple, acacia honey, and lemon zest carry through cleanly, giving the wine a dry, energetic finish. Its fresh profile means it is best enjoyed young, while the fruit and sparkle are at their most vibrant.

Production
The grapes come from the family’s own vineyards on the hillside of Montebelluna in the Volpago del Montello area, where the organic approach supports both vineyard health and environmental sustainability. The 100% Glera grapes are hand-harvested in late September. Fermentation takes place in temperature-controlled stainless steel tanks at 15°C, followed by a secondary fermentation in pressure tanks for 45 days to build the wine’s fine mousse and preserve its fresh aromatic profile.

Food & Serving
This Prosecco is an excellent match for light canapés and aperitifs, especially melon wrapped in Parma ham or toasted bread topped with crayfish salad. Serve well chilled at around 6–8°C to keep the wine crisp and lively. Decanting is not needed.
