Tasting Notes
Pale straw-yellow in the glass with green reflections and a fine, persistent mousse, this Prosecco immediately feels polished and inviting. The nose is lifted and charming, showing pear, yellow flowers and ripe citrus fruit. On the palate it is juicy, crisp and refreshing, with well-integrated acidity and continuous bubbles carrying flavors of pear, green apple, acacia honey and lemon zest. It finishes clean and dry, with just 7 g/L residual sugar and a discreet 11.5% alcohol, making it a lively style best enjoyed young for maximum freshness.

Production
The grapes come from the family’s own vineyards on the slopes of Montebellobakken in the Volpago del Montello area, where the hillside terroir helps preserve freshness and aromatic intensity. Case Paolin works organically throughout production to protect the environment, and the Glera grapes are hand-harvested at the end of September. The first fermentation takes place in temperature-controlled stainless-steel tanks at 15°C, followed by a second fermentation in pressure tanks for 45 days to build finesse and a delicate mousse.

Food & Serving
Ideal with light canapés and elegant appetizers, especially melon wrapped in Parma ham or toasted bread topped with crayfish salad. Serve well chilled at around 6–8°C, and there is no need to decant; simply open and enjoy while the wine is at its freshest and most vibrant.
