Casa Castillo Cuvée N Viñas Viejas 2019 in magnum is a rare, Mediterranean-style red that the estate only bottles in very specific vintages. Skipping both 2018 and 2020, this cuvée jumps from 2017 straight to 2019, underlining just how selective the winery is. Drawn from north-facing, old-vine parcels planted in the late 1970s, it offers a finely etched, terroir-driven expression of Mediterranean Monastrell from southeastern Spain.

Tasting Notes
In the glass, the 2019 Cuvée N Viñas Viejas shows a deep, vivid ruby core with a slight garnet hue at the rim, reflecting both concentration and freshness. The nose is lifted and aromatic, with notes of ripe red and black berries, wild herbs, lavender, and thyme, layered with hints of crushed rock, dried flowers, and a subtle savory spice from aging in large, neutral oak. On the palate, the wine is medium to full-bodied, with a beautiful balance between ripe fruit and bright, stony freshness. Flavors of dark cherry, plum, and blackberry are woven together with Mediterranean garrigue, licorice, and a touch of pepper and warm spice from the élevage. The tannins are fine yet slightly grainy, giving the wine grip without heaviness, while the acidity keeps everything precise and energetic. The magnum format and the structure of the 2019 suggest very good aging potential: this wine will drink well now with a short decant, but should evolve gracefully for 10–15 years, gaining complexity and polish over time.

Production
The 2019 Cuvée N Viñas Viejas comes from north-facing, old Monastrell vines planted in the late 1970s on sandy limestone soils covered with gravel in Jumilla, southeastern Spain. This combination of elevation, exposition, and poor, well-drained soils naturally limits yields and preserves freshness in a warm, Mediterranean climate. Harvesting is done by hand to ensure careful selection, particularly important in 2019, a somewhat atypical vintage marked by intense rainfall during harvest. The grapes were fully destemmed and fermented with native yeasts in traditional underground stone vats, favoring a slow, gentle extraction and a pure expression of fruit and terroir. After fermentation, the wine was aged for 16 months in used 500-liter oak barrels, chosen to avoid overt wood flavors while allowing the wine to refine its tannins, integrate its components, and gain complexity. Only 3,400 bottles were filled in March 2021, underlining its small-scale, artisanal production.

Food & Serving
This is a characterful Mediterranean red that pairs beautifully with hearty, flavorful dishes. Think grilled or roasted lamb, herb-crusted pork, game birds, or slow-braised beef and veal. It also works very well with rustic Mediterranean cuisine: dishes featuring rosemary, thyme, olives, tomatoes, and roasted root vegetables, as well as aged Manchego or other firm, nutty cheeses. Serve at 16–18°C to highlight both its fruit and herbal complexity. Given its structure and the magnum format, decanting for 45–60 minutes is recommended in its youth to soften the grainy tannins and allow the aromatics to fully open; less time will be needed as it matures.
