Description
Cappellano Barolo Chinato is a true Piedmontese classic: a deeply aromatic, artisan-made wine based on Barolo and infused with a historic blend of botanicals. Originally perfected in the late 1870s by Giuseppe Cappellano, it began life as a “medicinal” and anti-malarial tonic before becoming one of Italy’s most iconic meditation wines.
Tasting Notes
In the glass, it typically shows a dark garnet to mahogany hue with amber reflections, signaling richness and complexity. The nose is intensely perfumed, with layers of dried rose petals, cherries, orange peel, spice, cocoa, and bitter herbs, all woven around Nebbiolo’s unmistakable character.
On the palate it is silky yet vibrant, balancing sweetness, bitterness, and warming spice with notes of dried fruit, cocoa, cinchona-like herbs, and a subtle earthy depth. The finish is long, elegant, and gently medicinal in the best sense, making it ideal for slow sipping; it can age gracefully for several years, developing even greater aromatic complexity.

This Chinato is rooted in the historic Barolo zone of Piedmont, where Nebbiolo provides the wine’s structure and aromatic backbone. The production follows a family-held artisanal tradition rather than a fixed formula, with botanicals macerated into the base wine to create a layered, characterful dessert wine that reflects both local culture and inherited craftsmanship.
Food & Serving
Serve slightly cool, around 12-16°C, to preserve its aromatic lift and balance. It pairs beautifully with dark chocolate, hazelnut desserts, fruit tarts, or simply as a contemplative after-dinner wine; decanting is generally not necessary, but allowing it to breathe briefly can help open the aromas.
