Canon 2023 is crafted from vines rooted in the fabled limestone plateau and slopes of Saint‑Émilion, a terroir that naturally imparts tension, fragrance and that signature mineral, saline lift. The blend is dominated by Merlot with a significant proportion of Cabernet Franc, harvested parcel by parcel at optimal ripeness, largely by hand to ensure delicate selection of bunches. In the cellar, fermentation takes place in temperature‑controlled vats, with gentle extraction to preserve purity and finesse rather than power. The wine is then aged in French oak barrels—typically with a carefully judged percentage of new oak—to polish the tannins, add subtle spice and support the wine’s structure without overwhelming its limestone‑etched character.
