Tasting Notes
In the glass, Canon 2022 shows a deep, vibrant ruby colour with purple highlights, signalling both concentration and youth. The nose is immediately seductive: sweet raspberries, wild berries and ripe cherries are lifted by delicate notes of violet, rose petal and a refined graphite, pencil-shaving character. Subtle hints of black truffle and a gentle earthiness add depth and complexity as the wine opens. On the palate, it is full-bodied, dense and enveloping, with a tightly packed core of dark and red fruit that unfolds in layers. The tannins are sweet, velvety and very finely textured, giving the wine its muscular frame without any harshness. There is a salty, mineral-driven finish – a clear signature of Canon’s limestone soils – that keeps the richness in perfect balance and draws the flavours out long after each sip. While already impressive in its youth, this 2022 has the structure and freshness to age gracefully for two to three decades, gaining complexity and tertiary notes with time in the cellar.

Château Canon sits on the famed limestone plateau of Saint-Émilion, where thin clay soils over pure limestone bedrock give wines of both power and striking minerality. Merlot typically forms the backbone of the blend, complemented by Cabernet Franc, both sourced from meticulously tended vineyards that are harvested by hand parcel by parcel at optimal ripeness. In the cellar, Canon follows a precision-driven, plot-by-plot vinification, with gentle extraction to preserve fruit purity and tannin finesse. Aging takes place in French oak barrels, a portion of them new, to polish the structure and add subtle spice without overwhelming the wine’s limestone-driven identity.

Canon 2022 is a natural partner for refined, flavourful dishes such as roast lamb with herbs, dry-aged ribeye, duck breast, veal chops or game birds, as well as truffle-infused dishes and earthy mushroom preparations that echo its savoury nuances. It also works beautifully with well-aged hard cheeses like Comté or matured Gouda. Serve at 16–18°C (60–64°F) to highlight both its fruit and its freshness. In its youth, decanting for 1–2 hours is recommended to allow the aromatics to fully unfurl and the structure to soften; with bottle age, a shorter, gentle decant to remove sediment will suffice.
