Tasting Notes
In the glass, Canon 2021 shows a vibrant, deep ruby colour with youthful purple hues at the rim. The nose opens with pure notes of wild raspberries, red cherries and ripe plums, lifted by floral hints of iris and subtle top notes of licorice, mint and sweet baking spices. There is a distinct sense of clarity and definition in the aromatics, with the limestone minerality already peeking through. On the palate, the wine is medium to full-bodied, yet wonderfully elegant, with a fleshy, sensual core of red and dark berry fruit. Ultra-fine, powdery tannins wrap around a deep, seamless mid-palate, while bright, precise acidity keeps everything lively and focused. The finish is long, saline and mineral-driven, leaving lingering impressions of red fruit, flowers and a gentle spice. While already enticing in its youth, the structure and freshness suggest excellent aging potential over 10–20 years, gaining complexity and tertiary nuances with time.

Production
Château Canon lies on the historic limestone plateau of Saint-Émilion, where thin clay soils over deep limestone bedrock give naturally low yields and an unmistakable mineral line to the wines. The vineyard is primarily planted to Merlot with a significant portion of Cabernet Franc, all farmed with painstaking attention to parcel-by-parcel detail. Grapes are harvested by hand at optimal ripeness and carefully sorted before vinification in temperature-controlled vats, allowing for gentle extraction to preserve finesse. The 2021 was aged in French oak barrels, with élevage adapted to the vintage’s fresh profile; it was taken out of barrel about a month earlier than usual and was bottled without fining, a practice the estate has followed since 2010 to maintain purity and texture.

Canon 2021 is a natural partner for refined dishes such as roast lamb with herbs, duck breast, veal chops, or beef fillet in a red wine reduction. It also pairs beautifully with truffle dishes, mushroom risotto, game birds, and aged hard cheeses like Comté or aged Gouda, which echo its savory, mineral complexity. Serve at 16–18°C (60–64°F) to highlight both the fruit and the freshness. Young bottles will benefit from 1–2 hours in a decanter to allow the aromatics to unfurl and the tannins to soften, while mature bottles should be handled more gently and decanted briefly to remove sediment.
