Canon 2018 in magnum format (1.5L) is a refined Saint-Émilion red that beautifully captures the elegance and depth of right-bank Bordeaux. Crafted predominantly from Merlot with a substantial share of Cabernet Franc, it offers both sensual fruit and a poised, mineral backbone. Tasting Notes
In the glass, Canon 2018 shows a deep, vibrant garnet-purple hue, hinting at its concentration and youth. The nose is immediately expressive and seductive, unfolding with aromas of candied violets, preserved plums, black cherry compote and fine Ceylon tea. Nuances of kirsch, powdered cinnamon, assorted dark chocolates and a subtle, earthy note of fertile clay soil add impressive complexity and detail.
On the palate, this is a medium to full-bodied wine, layered and juicy with a core of ripe black fruits—black cherry, plum and blackberry—wrapped in beautifully polished, velvety tannins. There is a refreshing line of acidity that keeps everything lifted and precise, balancing the 14% alcohol effortlessly. The finish is long, perfumed and graceful, echoing floral notes, sweet spice and dark chocolate. In magnum, the aging potential is excellent: while already approachable with a decant, it should continue to evolve and gain tertiary complexity over 15–25 years, and likely longer under proper cellaring conditions.
Production
Château Canon is located on the prime limestone plateau of Saint-Émilion, where thin clay soils over limestone bedrock give naturally low yields, superb drainage and wines marked by finesse and a distinctive mineral energy. The 2018 Canon is a blend of 72% Merlot and 28% Cabernet Franc, sourced from meticulously tended vineyards and harvested by hand at optimal ripeness parcel by parcel. In the cellar, gentle handling—often including gravity-fed transfers—is used to preserve purity and finesse, followed by fermentation in temperature-controlled vats and élevage in French oak barrels. The aim is to capture the character of the vintage and the limestone terroir rather than overwhelm it with wood, resulting in a wine of clarity, balance and precision.
Food & Serving
Canon 2018 is a versatile yet thoroughly gastronomic Bordeaux that shines with refined dishes. It pairs beautifully with roast lamb, beef tenderloin, duck breast, veal chops, game birds, truffle risotto, mushroom-based dishes and aged hard cheeses like Comté or aged Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and freshness. Given the youth and density of the 2018 vintage—especially in magnum—decanting for 1.5 to 3 hours is recommended if enjoyed now, both to soften the tannins and to allow the floral, spicy and earthy nuances to fully unfurl.
