Often overshadowed by the more opulent 2015, the 2014 Canon remains a superbly balanced, cellar‑worthy Saint‑Émilion that rewards those who appreciate detail and nuance.

Tasting Notes
In the glass, Canon 2014 shows a deep, vibrant ruby hue with a youthful brightness at the rim, hinting at both concentration and freshness. The bouquet is very finely etched: vivid notes of wild raspberry and ripe forest strawberries intertwine with crushed stone, subtle florals and a gentle, chalky minerality. With air, touches of red cherry, delicate spice and a whisper of tobacco and cocoa begin to emerge, adding further complexity. On the palate, this is medium‑bodied and beautifully proportioned, carried by fine, silky tannins and a lively, well‑integrated acidity. The red berry fruit is pure and focused, lifted by savoury undertones, graphite and a faint, mouth‑watering salinity from the limestone soils. There is a quiet energy and tension through the mid‑palate that leads into a long, delicately spicy finish that lingers with notes of red berries, subtle cloves and mineral freshness. Already approachable, Canon 2014 still has plenty of structure and balance to develop further complexity over the next 10–15 years, and will continue to drink well beyond that with proper cellaring.

Production
Château Canon lies on the famed limestone plateau of Saint‑Émilion, where thin clay topsoils over pure limestone give wines of fragrance, precision and an unmistakable mineral backbone. The vineyards, planted primarily to Merlot with a significant proportion of Cabernet Franc, are carefully managed for low yields to ensure concentration and purity of fruit. Harvest is carried out by hand, parcel by parcel, to capture each plot at perfect ripeness. In the cellar, the grapes are sorted meticulously, then vinified in temperature‑controlled vats to preserve aromatic definition and finesse. Canon 2014 is traditionally aged in French oak barrels, a significant proportion of which are new, for around 18–20 months, allowing the tannins to polish and the wine to gain texture and complexity without losing its vibrant, limestone‑driven character.

Food & Serving
Canon 2014’s balance and freshness make it a versatile partner at the table. It pairs beautifully with classic dishes such as roast lamb with herbs, grilled or pan‑seared veal, duck breast, or a beef filet with mushroom jus. It also works well alongside game birds, truffled poultry, earthy lentil dishes, and aged hard cheeses like Comté or Manchego. Serve at 16–18°C (60–64°F) to highlight its aromatics and freshness; in its youth and mid‑maturity, decanting for 1–2 hours is recommended to allow the bouquet to fully open and the tannins to soften, revealing the wine’s full complexity.
