Tasting Notes
In the glass, Camossi Franciacorta Dosaggio Zero shows a bright, pale straw color with subtle golden highlights and a fine, persistent mousse. The nose opens with delicate aromas of green apple, citrus zest and white flowers, layered with hints of brioche, almond and chalky minerality.
On the palate, it is bone-dry and elegantly structured, with a lively, precise acidity that keeps everything fresh and focused. Flavors of lemon, crisp pear and green plum are backed by nuances of toasted hazelnut, bread crust and a subtle saline edge, leading to a long, clean and distinctly mineral finish. This Franciacorta is enjoyable now for its vibrancy, but also has the structure and acidity to develop additional complexity over the next 3–5 years in bottle.
Production
Grown in the rolling hills of Franciacorta in Lombardy, the grapes for this wine come from vineyards rooted in morainic soils rich in minerals, stones and glacial deposits—ideal for producing structured, elegant sparkling wines. The fruit is typically harvested by hand to ensure careful selection and gentle handling of the Chardonnay and Pinot Nero. After a soft pressing, the base wines are fermented in stainless steel to preserve freshness, with potential partial fermentation or aging on fine lees to build texture and complexity. The second fermentation takes place in the bottle using the traditional method, followed by an extended period of aging on the lees to develop depth and fine bubbles. As a “Dosaggio Zero,” no sugar is added at disgorgement, allowing the terroir and natural balance of the wine to shine through.
Food & Serving
This dry and precise Franciacorta is a versatile partner at the table, pairing beautifully with oysters, crudo, sushi, and delicate shellfish, as well as carpaccio, tartare, and light fish dishes. It also works well with soft cheeses, vegetable tempura, poultry with citrus-based sauces, and refined appetizers. Serve well-chilled at around 6–8°C (43–46°F) to highlight its freshness and minerality. A brief aeration in the glass is usually sufficient; decanting is not necessary, though opening the bottle 10–15 minutes before serving can help the aromas fully unfold.
