Tasting Notes
Deeply colored for Pinot Noir, this wine opens with aromas of blackcurrant, red cherries and plums, lifted by floral notes of chamomile, lavender and violets. On the palate, it is layered and generous, echoing the fruit-driven nose while adding ripe red currants and a touch of cocoa. The wine finishes long and persistent, with the kind of length and structure that invites cellaring. It already shows excellent harmony, but it should continue to evolve beautifully over the next decade.

Production
De Villiers Vineyard was planted to Pinot Noir more than 20 years ago and is known for producing dark, concentrated wines with impressive fruit, intensity and finesse. For this vintage, winemaker Mike Waller chose to ferment with about half the clusters left whole, then matured the wine for 18 months in French oak barrels, with a little over one-third new oak, adding complexity and structure.

This Pinot Noir is a natural match for roasted duck, mushroom risotto, game birds, lamb or grilled salmon. Serve it at 15-17°C and consider decanting briefly if opening it young, to let the aromatics unfold and the layers of flavour open up more fully.
