Tasting Notes
In the glass, it shines with a bright straw-yellow colour accented by light green reflections. The nose is expressive and layered, offering fresh yellow apple, honeydew melon, dried chamomile, and a subtle graphite note, all lifted by a gentle herbal character. The palate is harmonious and polished, with a creamy texture balanced by crisp acidity and a saline finish that gives the wine real length. It feels both generous and focused, with a pleasant aftertaste that makes it immediately enjoyable while also suggesting good short- to mid-term ageing potential.

Production
This wine comes from east-facing vineyards in St. Nikolaus at 550-600 metres above sea level in Trentino-Alto Adige, where the cool mountain climate supports slow ripening and excellent aromatic development. The grapes are whole-bunch pressed extremely slowly, and fermentation takes place spontaneously using the cloudy must in 500-litre oak barrels and large wooden casks. It then matures for 10 months in wood on fine lees, with regular bâtonnage to build depth, texture, and complexity.

Caldaro Quintessenz Pinot Bianco 2023 pairs wonderfully with elegant seafood dishes, shellfish, creamy risottos, roast poultry, and refined vegetable-based cuisine. Serve it chilled, ideally around 10-12°C, and there is no need to decant unless you want to give it a little extra air after opening.
