Tasting Notes
This Franciacorta typically shows a fine, persistent mousse and a luminous straw-golden color, often with subtle green reflections. On the nose, expect layered aromas of white flowers, citrus peel, ripe orchard fruit, toasted brioche, almond, and delicate pastry notes, all lifted by a clean, chalky freshness.
On the palate, it is elegant and precise, combining creamy texture with vibrant acidity and a long, mineral-driven finish. Extended lees aging brings additional depth, complexity, and a beautifully integrated profile. It has excellent aging potential in the glass and will continue to evolve gracefully over time after release.
Production
Made from Chardonnay, Pinot Blanc, and Pinot Noir, this Franciacorta comes from Lombardy’s Franciacorta zone, where cool conditions and mineral-rich soils help preserve freshness and finesse. Ca’ del Bosco is known for meticulous vineyard work and careful grape selection, with hand harvesting and strict sorting to ensure only the best fruit enters production. The wine then undergoes long lees aging, with this edition remaining in contact with its lees for at least 10 years before dégorgement, resulting in remarkable complexity and depth.
Food & Serving
Serve well chilled at 8–10°C to showcase its freshness and refined mousse. It pairs beautifully with oysters, caviar, shellfish, sushi, delicate seafood dishes, aged Parmesan, and lightly truffled appetizers, and it can also complement elegant poultry or creamy risotto. Decanting is not recommended; simply open shortly before serving to preserve its finesse and aromatic lift.
