Burn Cottage Sauvage Vineyard Pinot Noir 2021 is a refined expression of Central Otago Pinot Noir, combining the region’s characteristic freshness and intensity with an elegant, site-driven style. Produced by one of New Zealand’s leading biodynamic wineries, it offers a compelling balance of ripe red fruit, savoury complexity and fine-grained structure.

Tasting Notes
Bright ruby in colour, the wine opens with aromas of wild strawberry, red cherry and raspberry, complemented by floral notes, subtle spice and an earthy, savoury edge. On the palate, it is vibrant and finely textured, with concentrated red fruit, refreshing acidity and delicate tannins. Hints of herbs, mineral and gentle oak add depth through the finish, which is long, dry and polished. It can be enjoyed now, but should develop additional savoury complexity over the next several years with careful cellaring.

Sauvage Vineyard Pinot Noir is shaped by the cool, dry climate and dramatic diurnal temperature shifts of Central Otago, conditions that help preserve acidity while allowing the grapes to develop expressive fruit character. Burn Cottage is known for its biodynamic approach to vineyard management, with careful attention to soil health and the natural balance of the site. The fruit is crafted with a focus on preserving vineyard character, using gentle vinification and maturation to build texture without overshadowing the purity of the Pinot Noir.

Food & Serving
Serve at approximately 14–16°C, allowing the wine to open gradually in the glass. It pairs beautifully with roast duck, herb-crusted lamb, grilled salmon, mushroom dishes and earthy vegetarian cooking. Decanting is not essential for immediate enjoyment, but a short decant of 20–30 minutes can help reveal the wine’s floral and savoury nuances, particularly when served young.
