Crafted from Pinot Noir (Pinot Nero) grown on the slopes of the Côte des Bar, it offers a vibrant, gastronomic style far removed from simple aperitif rosés. With its extra-brut dosage, this Champagne is all about purity, precision, and the honest expression of terroir.

Tasting Notes
In the glass, this Champagne reveals a luminous, deep salmon to pale ruby hue, often with coppery highlights and a fine, persistent mousse. The visual richness hints at the wine’s structure and concentration, a hallmark of the saignée method. On the nose, expect an expressive bouquet of wild strawberries, raspberry coulis, redcurrant, and pomegranate, intertwined with notes of blood orange zest, rose petals, and a touch of sweet spice. Subtle undertones of chalk, brioche, and fresh herbs add complexity. The palate is dry, tense, and energetic, driven by Pinot Noir’s red-fruited core—think ripe strawberries, cherries, and cranberry—balanced by citrus brightness and a mineral backbone. The extra-brut dosage keeps everything tight and focused, giving a mouthwatering, saline finish with a fine, chalk-dusted grip. This non-vintage cuvée is ready to drink now for its vivid fruit and vibrancy, but it can develop further complexity over 3–6 years in bottle, gaining more autolytic and savory nuances while preserving its structure.

Production
Brocard Pierre works primarily in the Côte des Bar in southern Champagne, where the Kimmeridgian limestone and clay soils, rolling hills, and slightly warmer climate are particularly well-suited to Pinot Noir. Vineyards are often farmed with a strong focus on respect for the environment, favoring careful canopy management and lower yields to concentrate flavor. Grapes for this rosé are typically harvested by hand to ensure pristine fruit selection. The saignée method involves allowing a short maceration of Pinot Noir juice on the skins to naturally draw out color and flavor, rather than blending in still red wine, resulting in greater intensity and texture. Fermentation is carried out in stainless steel and/or oak, depending on the parcel and vintage components, followed by aging on the lees in bottle for an extended period to build complexity and finesse. The Extra Brut dosage keeps residual sugar very low, highlighting the purity of fruit and the chalky, saline edge of the terroir.

Food & Serving
This is a serious food rosé Champagne that shines at the table. Pair it with tuna tartare, salmon sashimi, or seared scallops to echo its red fruit and citrus lift, or match it with charcuterie, pâté en croûte, duck rillettes, and roasted poultry for a more savory interplay. It also works beautifully with earthy dishes like mushroom risotto, beetroot salads, and soft cheeses such as Brie de Meaux or young Langres. Serve well-chilled but not icy, around 8–10°C (46–50°F), to allow the aromatic complexity to open up.
