Brezza Barolo Cannubi 2021 is a classic expression of one of Barolo’s most celebrated crus, made from 100% Nebbiolo grown in the renowned Cannubi vineyard. Tasting Notes
In the glass, it typically shows a garnet-red color that is already beginning to reflect Nebbiolo’s graceful evolution. The nose is layered and refined, with aromas of red cherry, rose petals, dried herbs, liquorice, and earthy spice, complemented by subtle notes from oak aging. On the palate, it is structured and persistent, with firm yet polished tannins, vibrant acidity, and a precise mineral backbone. The wine is built for aging and will continue to develop complexity over many years, gaining more truffle, leather, and dried-fruit character with time in bottle.

Production
The Cannubi vineyard sits at around 250 meters above sea level with a south-east exposure, in a prized zone where two important geological formations meet: Marne di Sant’Agata Fossili and Arenarie di Diano. This combination of clay, limestone, and sandy sandstone gives the wine both depth and finesse. The grapes are 100% Nebbiolo, specifically Lampia and Michet, harvested by hand in October and carefully selected before destemming and pressing. Fermentation lasts 7–8 days at controlled temperature, followed by skin maceration with submerged-cap management and pumping over. After malolactic fermentation in spring, the wine matures for at least two years in Slavonian oak casks before further bottle aging.

Food & Serving
This Barolo is an excellent match for rich, flavorful dishes such as braised beef, roasted game, truffle risotto, mushroom pasta, and aged cheeses. Serve it at 16–18°C, and consider decanting for 1–2 hours to allow its aromas and tannins to open fully.
