Tasting Notes
The wine has an intense straw-yellow colour. Aromas of linden blossom, papaya and white peach lead into a soft, full-bodied palate, balanced by mineral texture and a pronounced saline character. Production
The grapes come from the Venezia Giulia area of Friuli-Venezia Giulia. Ribolla Gialla bunches are harvested in the cool hours, in early September, to help preserve their primary aromas. After a short maceration, the must is gently pressed off the skins and fermented in temperature-controlled stainless-steel tanks. Extended ageing on the lees adds structure and complexity. The wine is described as organic, sustainably produced and suitable for vegans.

Food & Serving
Serve at 10–12°C with white fish, such as sea bass baked in a salt crust, or try it with blue cheese for a contrast between the wine’s freshness and the cheese’s intensity. Decanting is not necessary; simply open shortly before serving.
