Tasting Notes
In the glass, the 2015 Il Nocio shows a luminous, deep ruby core with garnet reflections beginning to emerge at the rim, signifying its evolution and complexity. The nose is fragrant and inviting, with vivid notes of ripe raspberry, wild strawberry and red cherry, intertwined with floral hints of violet and dried rose, and lifted by subtle spice—black pepper, aromatic herbs and a whisper of bitter almond. On the palate, this is all about polish and precision: a finely wrought texture where ripe, silky tannins and vibrant acidity are perfectly aligned. Layers of wild forest fruits, red currant and raspberry are framed by savoury notes of tobacco leaf, black pepper, cedar and a refined bitter-almond nuance on the long, noble finish. The 2015 vintage offers both generosity and structure, making the wine approachable now but with clear capacity to evolve over the next 10–15 years, gaining further complexity, tertiary spice, leather and truffle notes with proper cellaring.

Production
Il Nocio comes from a single, well-exposed vineyard parcel in Montepulciano, rooted in a mix of sandy, clay and alluvial soils that favor aromatic purity and fine tannins in Sangiovese. Yields are kept low, and harvesting is typically carried out by hand, with strict selection of bunches directly in the vineyard and again at the winery to ensure only perfectly ripe, healthy grapes are used. Fermentation usually takes place in temperature-controlled vats, often using indigenous yeasts, with a maceration long enough to extract depth and structure without sacrificing elegance. The wine is then aged in carefully chosen large oak casks and/or tonneaux, allowing the tannins to refine and the aromatics to harmonize, before further bottle aging prepares it for release as a poised and balanced Vino Nobile of single-vineyard character.

Food & Serving
This Vino Nobile is a natural partner for Tuscan classics such as bistecca alla fiorentina, slow-braised beef or veal, and rich ragù over pappardelle. It also pairs beautifully with game birds, roast lamb with rosemary, truffle dishes, aged Pecorino Toscano and other hard cheeses. Serve at 16–18°C (60–64°F) in large Burgundy or Bordeaux-style glasses to allow the aromatics to unfold. Decanting 1–2 hours before serving is recommended, especially in its youth, to soften the tannins and fully reveal the wine’s layered bouquet and length.
