Description
Bortolomiol Valdobbiadene Prosecco Superiore di Cartizze Dry comes from one of the most coveted corners of Prosecco country: the legendary Cartizze hill in Valdobbiadene. Made from Glera and crafted in the Dry style, it combines finesse, aromatic intensity, and a polished, elegant mousse that has made Cartizze a historic benchmark for premium sparkling wine.
Tasting Notes
In the glass, it shows a bright straw-yellow color with a fine, persistent stream of bubbles. The nose is expressive and layered, with notes of white peach, ripe pear, acacia blossom, citrus, and a subtle hint of hazelnut.
The palate is creamy and enveloping, with the gentle sweetness of the Dry dosage kept beautifully in check by lively freshness. The result is a harmonious, balanced wine with a satisfying, fruit-forward finish and a refined mineral lift. It is best enjoyed young for its vivid aromatic energy, though the structure and balance give it appealing immediate drinkability.
Production
The grapes come from the steep slopes of Cartizze, a historic cru within the Conegliano Valdobbiadene Prosecco Superiore zone, where exposure to the sun and mineral-rich soils help Glera develop its signature aromatic profile. The vineyard work is carried out with heroic viticulture methods, and the grapes are harvested entirely by hand from mid to late September.
After a gentle pressing and white vinification, fermentation takes place at controlled temperatures to preserve freshness and varietal character. The secondary fermentation is completed in autoclave using the Charmat-Martinotti method over about a month, followed by aging on lees in steel for one to three months to enhance texture and stability.
Food & Serving
This Cartizze Dry is a versatile sparkling wine that pairs especially well with refined aperitifs, delicate seafood, light shellfish dishes, sushi, soft cheeses, and fruit-based desserts or pastries. Serve well chilled at around 6-8°C. Decanting is not recommended; open and enjoy fresh to preserve its delicate mousse and aromatic precision.
