Description

Bortolomiol’s Valdobbiadene Prosecco Superiore Rive di Col San Martino Extra Brut is a limited-edition Glera sparkling wine released to mark the producer’s 70th anniversary. Made from a single vineyard on steep, hand-worked slopes, it offers a particularly dry, mineral expression of this celebrated Veneto hillside.

Tasting Notes
Straw yellow with green highlights, it has a fine, persistent mousse. The nose brings together green apple and crisp pear with lively notes of lemon, cedrat and lime.

Production
The Glera grapes come from a single vineyard in Rive di Col San Martino, within the heart of the Valdobbiadene Prosecco Superiore appellation. Its steep, well-exposed slopes, surrounded by woodland, are cultivated entirely by hand—a practice known as heroic viticulture. After gentle pressing, the must undergoes temperature-controlled primary fermentation with selected yeasts. The wine then takes its bubbles through the Charmat method over approximately one month, followed by three months on the lees and at least three months of bottle ageing.

Food & Serving
Serve well chilled, around 6–8°C, with spring-vegetable risotto, delicate fish baked in the oven or light meats. Its crisp, dry profile also suits aperitif occasions. Decanting is not recommended; serve directly from the bottle to preserve its fresh aromatics and fine bubbles.
