Tasting Notes
Pale gold in the glass with a fine, persistent mousse, this Champagne opens with an elegant bouquet of citrus peel, green apple, white flowers, and subtle pastry notes, framed by chalky minerality. With air, hints of pear, brioche, toasted almond, and a delicate saline edge emerge, giving the wine both energy and finesse.
On the palate it is dry, taut, and finely structured, with crisp orchard fruit, lemon zest, and a savory, mineral-driven finish. The extra brut dosage keeps the wine focused and gastronomic, while the perpetual reserve adds nuance and a rounded mid-palate. Food & Serving
Serve well chilled at 8–10°C. This is an excellent Champagne for aperitifs, but it also pairs especially well with oysters, sashimi, caviar, roast chicken, seafood tartare, and aged Comté or Parmesan. Decanting is not necessary; opening the bottle shortly before serving is sufficient to let the aromatics unfold.
