Tasting Notes
In the glass, the 2016 Quella displays a deep, saturated garnet to granat-purple hue, hinting at both concentration and youth. The nose is incredibly expressive: layers of warm black plums, blackberry and blueberry compote, and crème de cassis unfold alongside aromas of green mint, wild sage, tobacco leaf, graphite pencil shavings, licorice, smoke, and a subtle savory, almost Marmite-like toastiness. On the palate, this is a medium to full-bodied wine with a luxurious, velvety texture—silk-smooth yet firmly structured. Dense black and blue fruits cascade over the tongue, interwoven with earthy nuances, dark chocolate, and a faint mineral edge. The tannins are fine-grained and polished, giving the wine a sense of lift rather than weight. The finish is very long, fresh, and persistent, encouraging sip after sip. Production
Quella is one of Bond’s single-site expressions, drawn from a steep, rocky hillside vineyard in Napa Valley that is known for producing Cabernet Sauvignon with a distinctive mineral tension and purity of fruit. The terroir is defined by well-drained, stony soils and a warm, sunshine-rich climate moderated by elevation and cooling breezes, allowing the grapes to ripen slowly and evenly. Harvest is carried out by hand, with meticulous selection in the vineyard and again at the winery to ensure only pristine fruit is used. Vinification follows a Bordelais-inspired approach: small-lot fermentations, careful extraction, and élevage in high-quality French oak barrels (a significant portion new), where the wine matures and integrates its tannins and oak-derived complexities before bottling.

Bond Quella 2016 is an excellent partner for richly flavored, refined dishes such as dry-aged ribeye, roast lamb with herbs, beef tenderloin with a red wine reduction, or slow-braised short ribs. It also pairs beautifully with truffle-infused dishes, porcini risotto, and aged hard cheeses like Comté or Parmigiano-Reggiano. Serve at 16–18°C (60–64°F) to highlight its aromatics and texture. Decanting for 1.5–3 hours is recommended in its youth to fully open the bouquet and soften the structure; older bottles (10+ years) may need a shorter, more gentle decant primarily to separate sediment.
