Tasting Notes
In the glass, the 2018 Melbury shows a deep, vibrant garnet-purple hue that clings to the sides with a fine, richly colored rim. The nose is expressive and inviting, opening with vivid notes of fresh black cherries, ripe mulberries, and dark plums, intertwined with cassis, cinnamon toast, and a gentle touch of Sichuan pepper and warm spice.
On the palate, this is medium to full-bodied, poised and refined rather than overtly muscular. The core of crisp, pure black and blue fruit is framed by finely knit, powdery tannins and bright, refreshing acidity. Subtle mineral nuances emerge across the mid-palate, lending tension and drive, and carry through to a long, layered finish. Production
Melbury is drawn from a steep, carefully tended hillside vineyard overlooking Lake Hennessey in the eastern hills of Napa Valley, where well-draining, rocky soils and a warm, sunny exposition yield small, concentrated Cabernet Sauvignon berries. The fruit is harvested by hand, block by block, at optimal ripeness, with rigorous sorting in the vineyard and at the winery to ensure only pristine clusters make the cut. Fermentations are carried out in small, temperature-controlled vessels to preserve detail and aromatic purity, followed by élevage in predominantly new French oak barrels for an extended period. This patient, low-intervention approach allows the vineyard’s signature—its fine structure, mineral line, and polished fruit—to shine through in the finished wine.

Bond Melbury 2018 pairs beautifully with refined, richly flavored dishes such as dry-aged ribeye, herb-crusted lamb, slow-braised short ribs, or venison with a red wine reduction. It also works well with truffle-infused dishes, roasted root vegetables, and hard, aged cheeses like Comté or Parmigiano-Reggiano. Serve at 16–18°C (60–64°F) for optimal expression, and decant for 1–2 hours in its youth to allow the aromatics and texture to fully open. As the wine matures, a shorter decant of about an hour is typically sufficient to awaken its more nuanced layers.
