Bollinger R.D. 2008 is an iconic late-disgorged Champagne, released only after extended maturation on its lees to combine the depth of a mature vintage with remarkable freshness. The initials “R.D.” stand for “Recently Disgorged”, a style introduced by Bollinger in 1967 and now closely associated with the house’s bold, gastronomic Champagnes.

Tasting Notes
Deep golden in appearance, with a fine, persistent mousse and an expressive bouquet of toasted brioche, roasted hazelnut, dried apricot, honey and subtle spice. Extended lees ageing brings impressive aromatic complexity, while the 2008 vintage contributes precision and vibrant freshness. On the palate, this is powerful yet finely structured, showing layers of baked citrus, ripe orchard fruit, almond, chalk and gently savoury notes. The finish is long, dry and mineral, with excellent balance between richness and acidity. With its concentration and structure, the wine can continue to develop in bottle for many years when properly stored.

Production
The cuvée is based on Pinot Noir and Chardonnay from carefully selected Premier and Grand Cru vineyards in Champagne, reflecting Bollinger’s preference for structured, full-bodied wines. The grapes are gently pressed and the base wines are traditionally made with an emphasis on preserving texture and individuality, including the use of oak for part of the vinification. After blending, the Champagne undergoes an exceptionally long period of lees ageing before being recently disgorged with a low dosage, allowing the character of the 2008 vintage and the house style to shine through.

Food & Serving
A superb choice for refined dishes such as lobster, turbot, scallops, roast chicken, veal or poultry with creamy sauces. Its richness also makes it a natural partner for aged Comté, mature Parmesan and other nutty hard cheeses. Serve at 10–12°C in a white-wine glass to reveal its full aromatic range. Decanting is not essential, but a careful decant or brief airing in the glass can help open the wine, particularly when served young.
