Bollinger R.D Champagne 2007 is a remarkable expression of patience, depth, and precision — a vintage Champagne released only after extended cellar aging and disgorged just before it reaches the market. Crafted from 34% Chardonnay and 66% Pinot Noir, it combines Bollinger’s signature power with lifted elegance, making it a standout cuvée for collectors and Champagne lovers alike. The R.D. style, meaning "Recently Disgorged," is one of Bollinger’s most celebrated traditions, offering the rare interplay of mature complexity and vibrant freshness.

Tasting Notes
In the glass, it shows a refined, golden hue with a fine, persistent mousse. The nose is layered and expressive, with aromas that suggest ripe orchard fruit, citrus peel, toasted nuts, brioche, and subtle oxidative nuances from its long aging on lees and under cork. On the palate, it is both powerful and precise, delivering a broad, creamy texture balanced by lively acidity and the structure of Pinot Noir. Expect deep flavors, impressive concentration, and a long, mineral-tinged finish. While already beautifully complex, it has the structure and concentration to evolve further with additional cellaring.

Production
Bollinger R.D. 2007 is made primarily from Pinot Noir with a smaller portion of Chardonnay, sourced from carefully selected Champagne vineyards known for producing fruit with depth and character. The wine undergoes its first fermentation in oak barrels, a hallmark of Bollinger’s style that adds texture, nuance, and complexity. It is then aged for many years in bottle under cork before disgorgement, allowing the wine to develop its distinctive richness and layered profile.

Food & Serving
This Champagne pairs beautifully with refined dishes such as lobster, scallops, roasted poultry, truffle risotto, or aged hard cheeses. It also works well with dishes featuring mushrooms, nuts, or buttery sauces that complement its complexity. Serve chilled at around 8–10°C, and consider a short decant only if you want to open up its aromatics further, though it is not essential.
