Tasting Notes
In the glass, it shows a refined golden hue with a fine, persistent mousse. The nose is layered and complex, with aromas of ripe apples, toasted brioche, roasted nuts, citrus peel, and subtle mineral tones.
On the palate, it is full-bodied and beautifully textured, combining Pinot Noir’s intensity with Chardonnay’s elegance and structure. Notes of orchard fruit, baked pastry, chalky minerality, and a delicate saline finish create a long, polished aftertaste. Thanks to the wine’s vintage pedigree and Bollinger’s cellar maturity, it has outstanding aging potential, though the RD release already offers exceptional harmony and depth.
Production
The wine is based on 66% Pinot Noir and 34% Chardonnay, sourced from Champagne vineyards that favor structure, concentration, and aromatic precision. Bollinger’s signature vinification includes first fermentation in small oak barrels, adding breadth, texture, and complexity, followed by extended bottle aging under cork in the cellars for at least eight years. The recently disgorged style preserves freshness and vitality while showcasing the maturity developed during long lees contact.
Food & Serving
This Champagne pairs beautifully with luxurious dishes such as lobster, scallops, lobster bisque, roast poultry, truffle risotto, or aged hard cheeses. Serve chilled at around 8–10°C. Decanting is not usually necessary, but allowing it a few minutes in the glass can help the aromatics fully open.
