Bollinger B16 Extra Brut 2016 is a precision-driven Champagne that showcases the house’s unmistakable depth, texture and Pinot Noir-led style in a notably fresh, more linear expression. Crafted from a single vintage and marked by Bollinger’s trademark attention to detail, it reflects both the resilience of the 2016 harvest and the estate’s long-standing reputation for serious, cellar-worthy Champagne.
Tasting Notes
In the glass, it shows a refined, pale golden color with fine, persistent bubbles. The nose is elegant and layered, with notes of citrus peel, white flowers, crisp orchard fruit and subtle toasted nuances that gradually open with air.
On the palate, the wine is dry, precise and energetic, combining chalky freshness with Bollinger’s signature richness and savory complexity. Pinot Noir brings structure and depth, while the Extra Brut dosage keeps the finish taut, saline and beautifully focused. It already offers impressive clarity, but it also has the concentration to develop further over time.
Production
B16 is built around grapes sourced from carefully selected parcels in Champagne, with Bollinger’s emphasis on terroir expression and meticulous parcel-by-parcel vinification. The 2016 growing season required patience and precision, and the resulting wine reflects a cool, tension-filled profile balanced by ripe fruit and firm structure. As with the house style, production centers on preserving individuality, texture and purity through careful cellar work.
Food & Serving
This Champagne is ideal with oysters, scallops, sashimi, crab, roast chicken, or refined dishes featuring butter, mushrooms and mild cream sauces. Serve well chilled at around 8–10°C, and consider a short decant or a few minutes in the glass if you want the aromatics to open more fully.
Producer
Bollinger is one of Champagne’s most respected houses, founded in 1829 and renowned for its Pinot Noir-driven style, depth and aging capacity. Based in Aÿ, the estate has built a reputation for producing wines of exceptional structure and consistency, with a strong emphasis on vineyard sourcing and traditional craftsmanship. Its prestige in the region has made Bollinger a benchmark name for serious Champagne lovers worldwide.
