Sourced from several parcels around Villafranca del Bierzo, it combines character, finesse, and a strong sense of place, with traditional bush-trained vines rooted in clay soils at around 500 meters altitude.

Tasting Notes
In the glass, Pyjama 2021 shows a vibrant, polished profile with the freshness and lift typical of top Bierzo Mencía. The nose is expressive and aromatic, opening with cherry, clove, a touch of allspice, and a subtle earthy edge that gives the wine depth without heaviness. On the palate, it balances generous fruit with a light-footed structure, offering juicy red berry character, well-judged spice, and a pleasingly cool, elegant finish. The tannins are refined rather than dominant, making the wine approachable now, while its balance and precision suggest it can develop nicely over the next few years.

Production
Pyjama 2021 comes from various parcels around Villafranca del Bierzo, where the vines grow in clay-rich soils at roughly 500 meters above sea level. The site exposure to both northeast and south helps promote good airflow and even ripening, while the largely bush-trained vines contribute concentration and a naturally balanced fruit profile. The wine was made with spontaneous fermentation, followed by malolactic fermentation and 13 months of maturation in oak barrel.

This Mencía is a versatile partner for roast poultry, grilled lamb, mushroom dishes, aged cheeses, and tapas with paprika, chorizo, or earthy vegetables. Serve it slightly cool, ideally around 15–16°C, and consider decanting for about 30 minutes if drinking it young to let the aromatics open fully.
