Bodegas De La Riva’s Pedro Ximénez Veracruz Trebujena is a distinctive white wine with deep roots in the sherry tradition of Andalusia. Revived by visionary winemakers Ramiro Ibáñez and Willy Pérez, it combines old-school craftsmanship with striking originality, offering a wine that feels both historical and refreshingly modern.
Tasting Notes
In the glass, it shows a bright, luminous profile with a textured, almost vinous character. The nose unfolds with notes of apple, lemon, and stone fruit, layered with almonds, dried fruit, sea salt, and a subtle yeasty flor-driven complexity.
The palate is full and beautifully concentrated, with remarkable depth and a long, evolving finish. Extended aging in sherry oak adds hints of caramel and cedar, while the flor influence brings savory nuance and a saline edge. This is a wine with excellent complexity and the ability to hold its own for years, though it is already compelling now.
Production
Produced in Trebujena, in the sherry zone of southern Spain, this wine reflects a terroir shaped by Atlantic influence, chalky soils, and a long tradition of fortified-wine culture. It is aged for 12 months in 500-liter sherry oak casks, where a flor yeast layer develops naturally over the wine, shaping its signature aroma and texture. The result is a wine made in the style of vino de pasto, with careful oxidative and biological aging giving it depth, savory character, and unmistakable regional identity.
Food & Serving
Serve at around 14°C and give it a gentle swirl to help it open up in the glass. It is an excellent match for aged cheeses and Spanish cured ham, and also pairs beautifully with olives, almonds, and other savory tapas. Decanting is not essential, but a little air can help reveal its full aromatic range.

Bodegas De La Riva SL was acquired in 2017 by Ramiro Ibáñez and Willy Pérez, two highly respected figures in the modern revival of Andalusian wine. Their goal was to save a historic sherry-producing estate, but they have gone further by reintroducing wines of real character and ambition to the market. Today, the winery is recognized for its role in preserving and reinterpreting the traditions of the region, earning strong attention from critics and wine lovers alike.
