This is a collector’s bottle in every sense: a special jubilee label, old-vine fruit, and a vintage that perfectly balances power with striking finesse. Made exclusively from Sangiovese and sourced from some of the region’s oldest vineyards, it captures the shift in Bibi Graetz’s philosophy from sheer concentration toward pure elegance and transparency. The 2019 Colore stands out for its remarkable harmony: depth and intensity wrapped in a silken, refined frame. It is more textural and complete than the 2018, with lifted aromatics and a structural backbone that promises long life in the cellar. As a modern icon of Toscana IGT, this wine embodies the new, artisanal face of Tuscan greatness while paying homage to its historic grape and terroir.

Tasting Notes
In the glass, Colore 2019 shows a deep, vibrant ruby core with luminous garnet highlights, hinting at both concentration and finesse. The wine moves slowly around the bowl, leaving fine, stained tears that mirror its intensity and structure. The nose is beautifully lifted and complex: aromas of wild dark cherries and blackcurrants are woven with pressed roses, balsamic herbs, garden mint, and a mineral edge of crushed stone. Subtle notes of sweet tobacco, blood orange zest, and a whisper of spice emerge with air, giving the bouquet both depth and precision. On the palate, this is all about layered elegance rather than sheer weight. The attack is fresh and focused, with juicy Sangiovese fruit—ripe cherry, plum, and blackcurrant—wrapped in fine-grained, powdery tannins. There is a vibrant, mouthwatering acidity that drives the wine forward, revealing savory nuances of balsamic herb, licorice, and graphite beneath the fruit. The texture is polished and refined, offering more mid-palate presence and textural support than the slightly leaner 2018. The finish is long, pure and saline, leaving lingering impressions of red fruit, rose petals and cool stone. Aging potential is excellent. In magnum especially, this Colore is built for the long haul: it will gain in complexity and tertiary nuance over 12–20 years, with its peak likely starting around 2026 and extending well into the 2030s, and beyond in optimal cellaring conditions.

Production
Colore 2019 is Toscana IGT Sangiovese drawn from three remarkable vineyards planted with 70, 80 and 90-year-old vines, including the southern site of Poggio Matto in Casciano del Murlo (Siena province). These old vineyards, rooted deep in a mix of stony, well-draining soils and Tuscan clay, give naturally low yields and an intense, terroir-driven expression of Sangiovese. The Poggio Matto component was used in a higher proportion in this vintage to build additional structure, depth and momentum in the final blend. Harvesting is done by hand with meticulous selection in the vineyard and at the winery to ensure only perfectly ripe, healthy clusters are used. In 2019, Bibi Graetz chose to vinify Colore as 100% Sangiovese, removing the small Colorino portion of previous years to highlight the grape’s innate elegance. Fermentation takes place in small, temperature-controlled vessels, often using gentle extraction to preserve aromatic clarity and fine tannins. The wine is then aged in carefully selected barrels (a mix of new and seasoned wood) for an extended period, allowing it to gain complexity and texture while maintaining vibrancy and purity before being bottled, with magnums offering an especially slow, graceful evolution.

Food & Serving
Colore 2019 is a natural partner for refined, flavor-packed Tuscan and Italian cuisine. Think bistecca alla fiorentina, grilled or roast lamb with rosemary, slow-braised beef, or game birds such as pigeon or quail. It also shines alongside rich ragùs, pappardelle with wild boar, mushroom risotto, truffle dishes, and well-aged hard cheeses like Parmigiano Reggiano or Pecorino Toscano. Serve at 16–18°C (60–64°F) to showcase its aromatic complexity and freshness. Given its youth and structure, decanting is highly recommended—at least 1–2 hours for current drinking, and even longer for maximum expression, especially from magnum. As the wine opens up, you’ll see more floral, balsamic and mineral nuances, making it a particularly rewarding bottle to follow over the course of an evening.

Bibi Graetz, based on the hill of Fiesole overlooking Florence, has become one of Tuscany’s most exciting and influential small producers since releasing his first wines in 2000. An artist by training, Bibi turned to wine with an unconventional, visionary approach, focusing on old vines, native varieties—especially Sangiovese—and expressive, terroir-driven wines outside traditional DOCG structures.
