Tasting Notes
In the glass, the 2019 Blanc de Noir Brut Nature shows a very pale straw to onion-skin hue with fine, persistent bubbles and a delicate mousse. The nose is focused and mineral-driven, with notes of crisp green apple, pear skin, white cherry and lemon zest, layered with hints of brioche, hazelnut, chalk and a subtle floral lift.
On the palate, this is taut and linear, with the tension you expect from Brut Nature: bone-dry, vibrant acidity and a pronounced salty-mineral backbone. Flavors of citrus peel, green apple, white currant and red berries (in a very discreet, almost ghost-like way) are wrapped in a fine, creamy texture from extended lees contact. The finish is long, chiselled and refreshingly saline, making each sip incredibly moreish. Enjoy it now for its energy and cut, or cellar for another 3–6 years to allow the fruit and autolytic notes (brioche, biscuit, nutty nuances) to gain in complexity while the structure remains firm.
Production
The Ahr is one of Germany’s northernmost wine regions, a steep, narrow valley where Spätburgunder thrives on slate and volcanic soils that radiate heat and lend a distinctive, smoky-mineral character. Bertram-Baltes sources fruit from carefully tended, low-yield vineyards, often on terraced slopes, where much of the work must be done by hand due to the incline and the desire to preserve both vine health and fruit purity. Grapes for this Blanc de Noir are picked relatively early to retain bright acidity and freshness, then gently pressed as whole clusters to extract only the pure, lightly colored juice while minimizing phenolics from the Pinot Noir skins. Fermentation typically takes place with native yeasts, followed by a second fermentation in bottle using the traditional method. The wine then rests on its lees for an extended period to build texture and complexity, and is finally disgorged without dosage (Brut Nature), ensuring an unadorned, honest reflection of vintage, grape and place.
Food & Serving
This Blanc de Noir Brut Nature is an excellent aperitif, but it really shines at the table. Pair it with oysters, scallop crudo, sushi or sashimi to mirror its saline streak, or serve alongside lightly smoked fish, ceviche, and elegant shellfish dishes. It also works beautifully with tempura, vegetable terrines, goat cheese, or refined poultry dishes with light cream sauces, and it has the structure to stand up to charcuterie and delicate cured meats. For optimal enjoyment, serve at 8–10°C (46–50°F). A brief 10–15 minutes in the glass is usually enough to let it open up; decanting is not necessary, though pouring into larger white wine or tulip-shaped sparkling glasses rather than narrow flutes will help reveal its layers of aroma and texture.
