Tasting Notes
Pale straw in the glass, this Petit Chablis opens with lifted aromas of white peach, citrus fruit, and delicate floral notes. On the palate it is medium-bodied and juicy, with a clean balance of ripe fruit and freshness, finishing with a subtle spicy edge. The wine is best enjoyed for its youthful vibrancy and will drink beautifully now, though its crisp structure and lively acidity should allow it to hold nicely over the next few years.

Production
The Chardonnay grapes come from Bernard Defaix’s own vineyards located just outside the traditional Chablis zone in Burgundy, where the cooler terroir helps preserve freshness and finesse. After harvest, the grapes are carefully sorted before pressing, and fermentation and aging take place in temperature-controlled stainless steel tanks to maintain a pure and elegant style. The wine spends around eight months aging before bottling.

Food & Serving
This is an excellent match for salmon, mild cheeses, shellfish, sushi, or light poultry dishes. Serve chilled at around 8-10°C, and decanting is not necessary.
