Tasting Notes
Pale and slightly hazy in the glass, this wine reflects its minimal-intervention winemaking and natural texture. The nose is expressive and open, with bright citrus, crisp orchard fruit, and a pronounced stony, chalky lift that speaks clearly of its Chablis origins. On the palate, it is clean and vibrant, yet more layered and textured than a classic filtered Chablis, with generous fruit wrapped around a firm mineral core. Expect a fresh, saline finish and plenty of energy; while approachable now, it should also hold nicely over the next few years as the wine develops additional complexity.

Production
The grapes come from mature Chardonnay vines over 40 years old, grown in the limestone- and marl-rich soils of Chablis, where the cool climate helps preserve acidity and purity. Bernard Defaix works with a hands-off approach in this cuvée, harvesting carefully selected fruit and then vinifying it without clarification, filtration, or sulphur addition, allowing the wine’s natural expression and terroir-driven character to remain front and center.

Food & Serving
Serve well chilled at 10–12°C to highlight its freshness and precision. It pairs beautifully with oysters, shellfish, sashimi, grilled white fish, goat’s cheese, and other dishes where clean flavors and a mineral edge can shine. Decanting is generally not necessary, though a short aeration can help open the wine if served very young.
