Sourced entirely from Grand Cru vineyards in Aÿ, this cuvée balances intensity and precision with an ultra-refined dry style. It is a thoughtful, terroir-driven expression of the 2017 vintage, made by one of the region’s most respected artisan producers.

Tasting Notes
In the glass, the 2017 Aÿ Grand Cru Extra Brut shows a luminous, pale gold hue with fine, persistent mousse and delicate, bead-like bubbles. The nose is complex and inviting, with aromas of ripe orchard fruit—think yellow apple and pear—layered with wild strawberries, citrus zest, white flowers, and hints of brioche, almond, and chalky minerality. On the palate, this Champagne is taut, focused, and energetic, with the structure and depth you’d expect from Pinot Noir grown on Grand Cru slopes, lifted by the elegance and brightness of Chardonnay. Flavors of red and white stone fruits, lemon curd, and blood orange are framed by a saline, chalky backbone and a very dry, precise finish. The Extra Brut dosage keeps everything intensely fresh and linear, yet there’s a beautiful textural creaminess from lees aging. Drinking wonderfully now with some air, it also has the concentration and acidity to evolve gracefully for another 7–10 years, gaining more brioche, hazelnut, and honeyed nuance over time.

Production
The fruit for this Champagne comes from Grand Cru vineyards in Aÿ, a village renowned for its south-facing slopes and deep chalk and limestone soils that give Pinot Noir both power and finesse, with Chardonnay adding lift and tension. Bérêche farms their parcels with meticulous attention, favoring sustainable, low-intervention practices and careful hand-harvesting to ensure only perfectly ripe, healthy grapes make it to the press. In the cellar, the base wines are typically fermented with indigenous yeasts, with a significant portion aged in oak to build texture and complexity while preserving freshness; malolactic fermentation is often carefully managed or partially blocked to maintain vibrant acidity. Extended aging on the lees in bottle before disgorgement, followed by an Extra Brut dosage, results in a Champagne that is both vinous and precise, expressing the character of Aÿ and the 2017 vintage with clarity.

Food & Serving
This Aÿ Grand Cru Extra Brut is superb at the table, where its structure and minerality shine alongside food. Pair it with refined seafood dishes such as scallops in a light butter sauce, oysters, lobster, or sashimi, as well as delicate poultry, roast guinea fowl, veal tartare, or mushroom-based dishes and creamy risottos. It can also stand up to richer fare like poultry in cream sauce or truffled pasta, thanks to its depth and dry finish. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F). Decanting is not essential, but pouring it into a larger white wine glass and giving it a few minutes in the glass will help the aromatics open and reveal additional layers.
