This Extra Brut cuvée is all about precision, energy, and depth, with minimal dosage allowing the fruit and chalky minerality to take center stage. Produced by one of Champagne’s most respected artisan growers, it captures the soul of Pinot Noir from the region’s best sites in a refined, gastronomic style.

Tasting Notes
In the glass, this Blanc de Noirs shows a luminous, deep straw to pale gold color, often with subtle copper or onion-skin highlights, and a fine, persistent bead. The nose is intense and complex: ripe orchard fruits (yellow apple, pear), wild red berries, and mirabelle plum are layered with notes of brioche, hazelnut, dried flowers, chalk, and a faint hint of spice. On the palate, the wine is taut yet generous, with the natural power of Pinot Noir wrapped in a precise, dry framework. Expect a core of ripe citrus and red-fruited flavors—blood orange, redcurrant, baked apple—supported by a linear, salty minerality and firm, chalk-driven structure. The Extra Brut dosage emphasizes freshness and tension, while the texture is creamy and mouthfilling, leading to a long, savory finish with touches of toasted nuts and subtle smoke. This cuvée drinks beautifully on release but has the structure and acidity to evolve gracefully for 5–8 years in a good cellar, gaining more complexity and tertiary notes over time.

Production
Sourced from Benoît Lahaye’s estate vineyards in the heart of the Champagne region, primarily around Bouzy and neighboring Grand Cru villages, this Blanc de Noirs reflects south- and southeast-facing slopes renowned for giving Pinot Noir both ripeness and finesse. The soils are dominated by chalk and limestone with clay-limestone topsoils, providing excellent drainage and a pronounced mineral backbone in the wines. Lahaye farms his vines organically and biodynamically, with meticulous hand work in the vineyard and manual harvesting at optimal ripeness to ensure healthy, concentrated fruit. In the cellar, the grapes are gently pressed, and the base wines are typically fermented with indigenous yeasts, often in a mix of stainless steel and used oak barrels to add texture without overshadowing the fruit. Extended lees aging in bottle before disgorgement builds complexity and fine mousse, while a very low Extra Brut dosage keeps the wine focused and terroir-driven.

Food & Serving
This Champagne is a superb table wine and pairs beautifully with a range of refined dishes: think tuna tartare, salmon sashimi, scallops, langoustines, or oysters for a classic seafood match. Its structure and Pinot Noir depth also make it excellent with roast chicken, veal carpaccio, charcuterie, aged Comté, or soft-rind cheeses like Brie de Meaux. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatics and texture to open. A quick 15–20 minutes in a decanter or a few minutes in the glass after pouring can help the wine reveal its full complexity, especially if it has a few years of age.
