Tasting Notes
In the glass, the 2022 Les Caillets is a bright, luminous straw-gold with subtle green reflections, hinting at both richness and youth. The nose is intensely expressive yet poised, with ripe apricot, white peach and nectarine layered over notes of honeysuckle, acacia blossom and orange zest. Delicate touches of fresh ginger, almond and a light, stony minerality add complexity as the wine opens.
On the palate, this Condrieu is full-bodied but wonderfully precise, with a silky, almost creamy texture balanced by lifted acidity. Flavors of ripe stone fruit, tangerine and pear unfold gradually, supported by hints of jasmine tea, vanilla bean and a saline, granite-driven edge that keeps the wine fresh rather than heavy. The finish is long, floral and gently spicy, leaving impressions of apricot kernel and citrus peel. While highly enjoyable now for its youthful fruit and perfume, it will continue to develop more honeyed, nutty and exotic nuances over the next 4–6 years if stored well.
Production
Les Caillets is drawn from steep, terraced vineyards in Condrieu, planted on classic granite soils with a mix of sand and decomposed rock that naturally limit yields and intensify flavor. The Rhône’s continental climate, with warm days and cool nights, allows Viognier to ripen fully while retaining essential freshness. The grapes are typically harvested by hand in small crates to preserve berry integrity, with careful selection in the vineyard and at the winery. Gentle pressing is followed by a slow, temperature-controlled fermentation to protect the delicate aromatics. A portion of the wine is traditionally aged on fine lees, often in a mix of stainless steel and used French oak barrels, to build texture and complexity without masking the variety’s floral character. Regular bâtonnage may be used to add creaminess and depth while maintaining a clean, vibrant profile.
Food & Serving
This Condrieu is a superb match for refined, aromatic dishes. Think seared scallops with citrus butter, poached lobster, grilled langoustines or rich shellfish risottos, as well as roast chicken with tarragon, veal blanquette, or creamy poultry dishes. It also pairs beautifully with Asian-inspired cuisine featuring ginger, lemongrass or mild curry, and with soft cheeses such as Brie, Chaource or a young goat cheese. Serve chilled but not too cold, ideally at 10–12°C (50–54°F), to allow the aromatics to fully express themselves. Decanting for 20–30 minutes before serving can help the wine open up, especially in its first few years, revealing additional layers of fruit, florals and spice.
